Old World Masterpieces, New World Innovations

Taste your way through a brief history of the evolution of cheese, from classics created thousands of years ago to the latest award-winning “American Originals.” Compare and contrast three European archetypes with three domestic upstarts, versions inspired by the originals that take them to a new, all-American place. We’ll also have Old and New World wines so you can experiment with pairings.
This class will be taught by Susan Faigen, a Casellula fromager and the Cheese School Coordinator. Susan is a graduate of the California Culinary Academy, and has worked directly with some of America’s best cheesemakers, including Cypress Grove Chevre, Bellwether Farms and Fiscalini Farmstead Cheese.
Classes will be held in the “cheese cave” on the lower level of Alphabet City.
